Apple and Walnut Arugula Salad with Maple Vinaigrette

I love making my own salad dressings. It sounds like a lot of work, but in reality it only takes a few minutes to come together. The ingredients are simple and the maple vinaigrette will last for a week on your counter in a mason jar.

Make the dressing ahead of time and give it a nice shake and you’re ready to serve. The tartness of the granny smith apple pairs perfectly with the tart dried cranberries, and it all comes together with that subtly sweet maple vinaigrette.

Start by making the dressing. In a mason jar add 3 parts olive oil to 1 part vinegar. Eyeball the maple syrup to match around the same amount of vinegar. If you like it sweeter, add a bit more syrup. Add salt and pepper to taste. Secure the jar and shake! Store on your counter for up to a week.

In a large mixing bowl, combine the arugula, apple, chicken, dried cranberries, walnuts, and feta cheese. Pour over the maple vinaigrette and toss until well coated. Enjoy!

Apple & Walnut Arugula Salad with Maple Vinaigrette

Yield: 2 entree servings | Prep time: 15 minutes | Cook time: 0 minutes

Ingredients

For the salad:

  • 1 bag of arugula

  • 1 granny smith apple, diced

  • 1 cup of rotisserie chicken

  • 1/2 cup dried cranberries

  • 1/2 cup walnuts

  • 1/2 cup feta cheese (omit for paleo)

For the dressing:

  • 3 parts olive oil

  • 1 part white wine vinegar (really any vinegar works here)

  • 1 part pure maple syrup

  • Salt and pepper to taste
